Grilled Fruit with Lemon Zabaglione

INGREDIENTS
  • 1/3 cup packed brown sugar or maple syrup
  • Juice of 2 oranges
  • 2 nectarines or peaches, halved and pitted
  • 3 plums, halved and pitted
  • 2 bananas, halved lengthwise
  • 1 pineapple, peeled, cored, and cut into chunks
  • Lemon Zabaglione
  • Fresh mint leaves, for garnish

PREPARATION

Prepare a medium-hot fire (425° to 450°F) in a wood-fired grill.
Stir the sugar into the orange juice until dissolved. Brush the cut fruit with the sugar mixture.
Grill the fruit, cut side down, for about 5 minutes, or until the fruit is slightly soft and well marked. Move to indirect heat and continue to cook to the desired softness. Remove from the heat and set aside to cool.
Slice the fruit and keep each kind in a separate bowl. Let stand at room temperature for 30 minutes to allow flavors to mix.

Grilled Fruit Recipe Ingredients
  • 1/3 ripe pineapple, peeled, cored, and cut into 1-inch pieces
  • 2 firm ripe peaches or nectarines
  • 1 Anjou pear
  • 1 tablespoon oil
  • Freshly ground black pepper
  • 1/3 pound crumbled Gorgonzola cheese
  • 15 leaves fresh basil, chopped
  • 10 sprigs Italian flat leaf parsley, chopped
  • 2 cups arugula leaves, chopped
  • 1 tablespoon olive oil (optional)
Grilled Fruit Recipe Instructions 

 Preheat an outdoor grill for medium heat and lightly oil grate. Cut the peaches in half, removing the pit. Keeping the skin on the pear, cut straight down one side, then the opposite, leaving the core. Cut the two remaining sides off of the core (the pieces will not be even). Brush a small amount of oil on the pineapple, peaches, and pear to prevent them from sticking to the grill. Sprinkle all sides of the fruit with pepper. Place the fruit flesh side down on the grill and cook for 10 minutes, turning as needed, until soft and caramelized. When the fruit is cooked, remove from the grill and place on a serving platter. Sprinkle with crumbled cheese and top with chopped basil, parsley and arugula. Drizzle with olive oil if desired. Serve the grilled fruit hot...enjoy it !

Ingredients
  • 4 peaches, halved and pitted 
  • 2 tablespoons clover honey 
  • 1 cup soft cream cheese with honey and nuts 
  • 1 tablespoon vegetable oil
Directions
Preheat a grill for medium-high heat.
Brush peaches with a light coating of oil. Place pit side down onto the grill. Grill for 5 minutes, or until the surfaces have nice grill marks. Turn the peaches over, and drizzle with a bit of honey. Place a dollop of the cream cheese spread in the place where the pit was. Grill for 2 to 3 more minutes, or until the filling is warm. Serve immediately. Enjoy !

Grilled Fruit Recipe Ingredients

* 4 oz. cream cheese
* 1 tbsp honey
* 1 sliced red pear
* 1 sliced red apple
* 1/2 sliced cantaloupe
* 2 sliced bananas
* 1/4 cup melted butter
* 1 tbsp honey


Grilled Fruit Recipe Instructions:

Dip In a small bowl, combine softened cream cheese and honey. Set aside.
Glaze In a small bowl, combine melted butter and honey. Set aside.
Slice pear, apple, cantaloupe and bananas into large pieces.
In a large bowl, combine fruit and desired amount of glaze.
Toss gently.
Place fruit slices onto a medium grill, and grill fruit until grill marks appear, about one minute.
Remove from grill and place on a serving platter.
The grilled fruit is ready to serve with cream cheese dip. Makes 4 servings...enjoy it !

Grilled Fruit Recipe Ingredients

* Homemade or ready made pizza dough (NOT crust!) split into 6 sections and formed into disks
* 1 pint fresh strawberries
* 1 pineapple, cleaned
* 2 kiwi fruits peeled
* 1 jar (14-oz. size) strawberry preserves
* 1 package (16-oz. size) chocolate or white chocolate morsels

Grilled Fruit Recipe Instructions:

Cut fruit into pieces large enough so that they won't fall through the bars of the grill; or place a piece of aluminum foil over grill.
Spray the fruit lightly with cooking spray or EVOO.
Grill fruit until grill marks appear.
Set fruit aside and prepare pizza crust for the grill.
Spray the disks of pizza dough with cooking spray or olive oil and place on the grill.
Cook dough for 3-5 minutes.
Flip over, and spread with strawberry jam.
Add chocolate chunks and grilled fruit.
Continue to grill until chocolate melts and pizza is heated through, about 4-5 minutes.
Serve immediately. Enjoy !

* 2 fruit kabobs with strawberries and kiwi
* 2 tbsp vegetable oil
* 2 tbsp brown sugar
* 2 tbsp fresh lime juice
* 1 tsp ground cinnamon
* 1/4 cup fresh mint, chopped
* 2 apples, cored and cut into &nbsp1" pieces
* 2 bananas, peeled and cut into 1" pieces
* 2 peaches, pitted and cut into 1" pieces
* 4 kiwis, peeled and sliced into 1" thick sections
* 4 1" slices fresh pineapple, peeled, cored and cut into 1" pieces (or 1 can pineapple chunks)
* 16 strawberries, washed and hulled

Grilled Fruit Recipe INSTRUCTIONS

Preheat the grill.
In a small bowl, combine oil, sugar, lime juice, cinnamon and mint; mix until sugar is dissolved.
If you are using wooden skewers, soak them in water for about 10 minutes to prevent them from burning.
Alternate fruit pieces and thread onto skewers.
Brush fruit kabobs with the sugar mixture and place on the grill.

Grill fruit kabobs for about 6-8 minutes, turning frequently until fruit starts to brown and is heated through.The grilled fruit recipe is ready to serve..enjoy it !

  • Bananas

  • Ground cinnamon
  • Ground ginger

INSTRUCTIONS
Do not peel. Cut the fruit in half or wedges. Bananas must be cut lengthwise. Remove cores. Baste with a mixture of 1/2 cup butter, 3 tablespoons brown sugar and 1 teaspoon ground
cinnamon or ginger. Place fruit on grill with skin up. Grill on medium 8 to 10 minutes for halves, 4 to 5 minutes for rings or wedges. The grilled fruit recipe is ready to serve...enjoy it !
